Vanilla Bean Whipped Sweet Potatoes

The always-loved sweet potatoes are baked, puréed, and then combined with an authentic vanilla-bean-infused heavy cream sauce… giving them all the true-to-self vanilla love imaginable. Vanilla Bean Whipped Sweet Potatoes are an easy but oh-so-delicious side dish for all your special occasions. It’s simply amazing!

Ingredients

  • 4 pounds medium sweet potatoes
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 vanilla bean, split lengthwise, seeds scraped, bean pod and seeds reserved
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Use a fork to poke several holes into the sweet potatoes, then place them on an 18×26-inch baking sheet.

Step 3 –Bake the sweet potatoes until they are tender, about 35 minutes.

Step 4 –Transfer the baked sweet potatoes from the oven to a wire rack and let them cool slightly.

Step 5 –Use a sharp knife to cut the skin off of the sweet potatoes. Discard the skins.

Step 6 –Place the peeled sweet potatoes in a food processor and purée until they are fairly smooth.

Step 7 –In a medium saucepan, add the heavy cream, the butter, the vanilla bean pod, and the vanilla bean seeds and stir to combine. Bring to a simmer.

Step 8 –Transfer the vanilla bean pod from the heavy cream mixture and discard.

Step 9 –Add the heavy cream mixture to the puréed sweet potatoes and process until smooth.

Step 10 –Add the salt and the black pepper to the sweet potato mixture and stir to combine.

Step 11 –Serve.
