Vegan Cowboy Soup

People often think that you need to be carnivorous if you want to ride the trails or rustle cattle. Not true at all! In fact, with Vegan Cowboy Soup, you’ll be blazing your own trails! Packed with plenty of potatoes for comforting flavor and heartiness, Vegan Cowboy Soup is still rich and creamy without using a drop of dairy! That’s mighty impressive, we reckon! But nothing is as impressive as the flavor! Take a sip and see for yourself!

Ingredients

  • 2 tablespoons vegan butter
  • 2 medium onions, chopped finely
  • 2 ribs celery, diced
  • 2 large carrots, diced
  • 4 cloves garlic, finely chopped
  • 2 teaspoons salt, plus more, to taste
  • 1/2 teaspoon ground black pepper, plus more, to taste
  • 4 tablespoons all-purpose flour
  • 2 cups non-dairy milk, such as cashew or soy
  • 3 cups vegetable broth, divided
  • 5 medium potatoes, cut into 1/2-inch cubes
  • 1/4 teaspoon ground nutmeg
  • 1 bay leaf

Directions

Step 1 –In a large saucepan over medium heat, melt the vegan butter.

Step 2 –Add the onions, the celery, and the carrots and cook, while stirring constantly, until the onions are just starting to brown.

Step 3 –Add the garlic and cook until fragrant, about 2 minutes.

Step 4 –Add 2 teaspoons of the salt, 1/2 teaspoon of the black pepper, and the flour to the butter mixture and cook, while stirring constantly, until the raw flour smell dissipates, about 1 minute.

Step 5 –Gradually add the non-dairy milk to the flour mixture, while stirring constantly, until all lumps are dissolved.

Step 6 –Add 2 1/2 cups of the vegetable broth, the potatoes, the nutmeg, and the bay leaf to the mixture and stir until well-combined.

Step 7 –Reduce the heat to low.

Step 8 –Simmer the soup mixture, while stirring occasionally, until the potatoes are soft and just starting to break down, about 30 minutes.

Step 9 –Add as much of the remaining broth as needed to reach your desired consistency, stirring to combine and cooking until the flavors meld together, about 1-2 minutes.

Step 10 –Taste the soup for seasoning and add the extra salt and the extra pepper, as needed.

Step 11 –Remove and discard the bay leaf.

Step 12 –Serve.
