Vino Pie

No stew for you here; we are sweetening up the pot (pie) a bit with something a little different for you. Cheers to Vino Pie! After your first bite of the creamy, indulgent, chocolatey, red-wine-infused, whipped cream-topped pie, you’ll never go back to a slice of that plain old chocolate pie again. Raise your glass to this vivacious, homemade Vino Pie. Can we agree, everything is better with wine?!

Ingredients

For the crust:

  • 2 cups chocolate wafer cookie crumbs
  • 1 stick unsalted butter, melted
  • 2 tablespoons granulated sugar
  • salt, to taste

For the filling:

  • 1/2 cup cornstarch
  • 1 1/4 cups plus 3 tablespoons granulated sugar, divided
  • 1 (25-ounce) bottle dry red wine
  • 3 (4-ounce) bars bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • fine salt, to taste
  • 2 cups heavy cream, cold
  • chocolate curls or sprinkles, optional, to taste, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F and adjust a rack into the center of the oven.

Step 2 –In a medium bowl, add the wafer cookie crumbs, 1 stick of the melted butter, 2 tablespoons of the sugar, and the salt and stir to combine.

Step 3 –Evenly press the cookie crumb mixture into the bottom and up the sides of a 9-inch deep-dish pie pan.

Step 4 –Bake the crust until it is dry and set, about 15-18 minutes.

Step 5 –Transfer the crust to a wire rack and let it cool completely.

Step 6 –In a medium saucepan over medium heat, add the cornstarch and 1 1/4 cups of the sugar and whisk to combine.

Step 7 –Slowly add the red wine to the cornstarch mixture, while slowly whisking to prevent lumps from forming, and cook until it comes to a simmer and is very thick, about 8 minutes.

Step 8 –Transfer the wine mixture from the heat and add the chopped chocolate bars, the remaining butter, and the fine salt and whisk until smooth.

Step 9 –Transfer the chocolate filling into the cooled crust and refrigerate until chilled and set, about 4 hours and up to overnight.

Step 10 –In a large bowl, add the heavy cream and the remaining 3 tablespoons of sugar and use an electric hand mixer to beat until soft peaks form.

Step 11 –Spread the whipped cream over the top of the pie.

Step 12 –Sprinkle the chocolate curls on top of the whipped topping.

Step 13 –Slice and serve.
