Warm Polish Potato Salad

Ingredients

  • 8-10 small red potatoes
  • water, to taste
  • 2 bratwurst links, uncooked
  • 1 fresh kielbasa or Polish sausage link
  • 2 tablespoons butter
  • 5 teaspoons sugar
  • 4 teaspoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1/2 teaspoon celery seed
  • 3/4 cup chicken broth
  • 1/3 cup white wine vinegar
  • 1 small red onion, sliced
  • 1/2 cup celery, sliced
  • 1/4 cup fresh parsley, minced, plus more, to taste, for garnish

Directions

Step 1 –In a large saucepan, add the potatoes and enough of the water to cover the potatoes. Bring it to a boil.

Step 2 –Reduce the heat, cover, and cook the potatoes until they are tender but firm, about 15-20 minutes.

Step 3 –While the potatoes are cooking, in a large skillet over medium heat, cook the bratwursts and the kielbasa until they reach an internal temperature of 160 degrees F.

Step 4 –Transfer the bratwurst and the kielbasa from the skillet and cut them into 1/4-inch-thick slices.

Step 5 –In the same skillet, melt the butter.

Step 6 –Add the sugar, the flour, the salt, the ground mustard, and the celery seed and cook, while stirring, until the mixture is hot and bubbly.

Step 7 –Gradually add the broth and the vinegar to the flour mixture and bring to a boil.

Step 8 –Cook the sauce mixture, while stirring, until it thickens.

Step 9 –Stir the onion, the celery, 1/4 cup of the parsley, the bratwurst slices, and the sausage slices into the sauce mixture.

Step 10 –Drain the potatoes and let them cool enough to handle.

Step 11 –Peel the potatoes and cut them into 1/4-inch slices.

Step 12 –Gently stir the potatoes into the meat mixture and cook until heated through.

Step 13 –Garnish with the extra parsley and serve.
