Yakitori Chicken

Yakitori Chicken is often served as popular street food in its native country, Japan. It’s easy to see why: being on skewers, it’s a fun and handy meal on the go. They’re also amazingly easy and speedy to make at home on your own grill, so you can have all the savory, juicy indulgence of street-fare with all the craft and care of a home-cooked meal. The chicken and bright red peppers are both made better with the addition of a tangy soy barbecue sauce; the chicken is even slathered in it. Yakitori Chicken is a perfect addition to barbecue and cookout menus because no one can deny how good it is!

Ingredients

  • 1/2 cup mirin (sweet rice wine)
  • 1/2 cup sake
  • 1/2 cup soy sauce
  • 1 tablespoon sugar
  • 2 large sweet red peppers, cut into 2-inch pieces
  • 2 pounds of chicken thighs, boneless, skinless, and cut into 1 1/2-inch pieces
  • 1 bunch of green onions

Directions

Step 1 –Preheat the grill over medium heat.

Step 2 –In a small saucepan, combine the mirin, sake, soy sauce, and sugar. Bring the mixture to a boil over medium-high heat. Remove the saucepan from the heat.

Step 3 –Thread the peppers onto two metal or soaked wooden skewers. Thread the chicken onto six metal or soaked wooden skewers.

Step 4 –Grill the chicken, covered, turning occasionally until the meat is cooked through at 165 degrees F internally, about 10-12 minutes. In the last 3 minutes of cooking, begin basting the chicken frequently with the soy sauce mixture.

Step 5 –Grill the peppers, covered, until tender, about 4-5 minutes. Grill the green onions, covered and turning occasionally, until lightly charred, about 1-2 minutes.

Step 6 –Serve the chicken and vegetables with the reserved sauce.
