Zicken Casserole

Stuffed with all the zeal of flavorful chicken and zesty zucchini goodness, this quick and easy casserole is a perfect match for your busy schedule, but zealous enough to tackle your Wednesday woes of pining after a good meal. We are just being zany… Zicken Casserole (see what we did there?!) is an excellent meal any time of the week when you are craving that zap of the crazy comfort you deserve. It’s a little bit chicken, it’s a little bit zucchini, and it’s stuffed with a whole lot of zazzy flavor we are sure your whole zoo (i.e. family) will love! So, don’t zigzag around on this one. Zip to it and get in the zone with the best comfort food you will find! It will get you back to zooming again in no time!

Ingredients

  • 1 (6-ounce) package stuffing mix
  • 3/4 cup butter, melted
  • 3 cups zucchini, diced
  • 2 cups chicken breast, cooked, cubed
  • 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
  • 1 medium carrot, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup sour cream

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 7×11-inch baking dish.

Step 3 –In a large bowl, add the stuffing mix and the melted butter and mix well.

Step 4 –In a small bowl, set aside 1/2 cup of the stuffing mix for the topping.

Step 5 –Add the zucchini, the chicken breast, the cream of chicken soup, the carrot, the onion, and the sour cream to the remaining stuffing mixture and mix well.

Step 6 –Transfer the chicken breast mixture to the prepared baking dish and evenly sprinkle with the reserved stuffing mixture.

Step 7 –Bake the casserole, uncovered, until it is golden-brown and bubbly, about 40-45 minutes.

Step 8 –Plate and serve.
