15-Minute Scampi

Ingredients

  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • juice of 2 lemons
  • 1/2 cup white wine
  • salt, to taste
  • ground black pepper, to taste
  • hot sauce, to taste
  • 8 ounces angel hair pasta
  • 1/2 cup parmesan cheese, grated
  • basil, to taste, chopped
  • parsley, to taste, chopped

Directions

Step 1 –In a large skillet over medium heat, heat the olive oil and the butter.

Step 2 –Add the onions and the garlic and cook until the onions are translucent, about 2-3 minutes.

Step 3 –Add the shrimp and cook, stirring, until the shrimp start to turn pink, about 2-3 minutes.

Step 4 –Add the lemon juice, the wine, the salt, the pepper, and the hot sauce to the shrimp and stir.

Step 5 –Reduce the heat to low and cook until the shrimp are cooked through, about 2 minutes.

Step 6 –Transfer the skillet from the heat.

Step 7 –Bring a pot of salted water to boil.

Step 8 –Add the angel hair pasta and cook to al dente, according to the package directions.

Step 9 –Reserve 1-2 cups of the pasta water and then drain the pasta.

Step 10 –Add the pasta to the skillet with the shrimp and toss to combine.

Step 11 –Gradually add the reserved pasta water, as needed, to thin the sauce and help bind it together.

Step 12 –Taste for seasoning and add the salt and the pepper as needed.

Step 13 –Top the pasta with the grated parmesan, the basil, and the parsley.

Step 14 –Serve.
