What do the three T’s in this 3T Casserole stand for? Well, tater tots and tacos, of course! Doesn’t that sound like quite a delicious combo?! We think so. Can’t you almost taste the zesty Tex-Mex taco meat mixed together with the perfectly crispy tater tots and the melty Mexican cheese?! It’s the kind of flavor fiesta you’ll never want to leave! And now, not only do you know what 3T Casserole stands for, but also just how delicious it is going to be!
Ingredients
- 1 pound ground beef
- 1 (16-ounce) bag frozen whole-kernel corn with red and green bell peppers
- 1 (12-ounce) can black beans, rinsed and drained
- 1 small onion, diced
- 1 clove garlic, minced
- 1 (1-ounce) packet taco seasoning mix
- 1 (12-ounce) bag Mexican cheese blend, shredded, divided
- 1 (16-ounce) package frozen bite-size tater tots
- 1 (12-ounce) can enchilada sauce
- sour cream, to taste, for topping
- scallions, to taste, sliced, for topping
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.
Step 3 –In a skillet over medium heat, cook the ground beef, while crumbling, until completely browned, about 5-7 minutes.
Step 4 –Add the corn with red and green peppers, the black beans, the onion, the garlic, and the taco seasoning mix to the beef mixture and cook, while stirring, until heated through, about 10 minutes.
Step 5 –Let the beef mixture cool slightly.
Step 6 –Add the beef mixture, 3/4 of the Mexican cheese blend, and the tater tots to a large bowl and stir to combine.
Step 7 –Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish.
Step 8 –Add the beef mixture to the top of the sauce and pat it down into an even, solid layer.
Step 9 –Pour the remaining enchilada sauce over the beef mixture.
Step 10 –Bake the casserole for 40 minutes.
Step 11 –Sprinkle the remaining cheese over the casserole and bake until it is melted and bubbly, about 5 minutes.
Step 12 –Top with the sour cream and scallions and serve.
