  • 3 slices bacon
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 4 teaspoons rice vinegar or cider vinegar
  • 1/4 teaspoon ground pepper
  • 4 cups broccoli florets, finely chopped
  • 1/2 cup scallions, sliced
  • 1/2 cup extra-sharp cheddar cheese, shredded

Directions

Step 1 –In a large skillet over medium heat, cook the bacon until crisp, about 5-7 minutes.

Step 2 –Transfer the bacon to a paper-towel-lined plate, reserving 1 tablespoon of the bacon fat.

Step 3 –Chop the bacon when cool enough to handle and set it aside.

Step 4 –Whisk the sour cream, the mayonnaise, the vinegar, the ground pepper, and the reserved bacon fat together in a large bowl.

Step 5 –Add the broccoli, the scallions, the cheese, and the chopped bacon to the dressing and stir to coat.

Step 6 –Serve.
