Ingredients

  • 2 1/2 pounds gold potatoes, chopped into large pieces
  • 6 tablespoons butter
  • 3/4 cup buttermilk
  • salt, to taste
  • pepper, to taste
  • chives, to taste

Directions

Step 1 –In a large pot of salted boiling water, cook the potatoes until very tender, about 20 minutes.

Step 2 –Drain the potatoes and, once cool enough to handle, peel them.

Step 3 –While the potatoes are cooking, in a small saucepan over medium heat, add the butter and cook, whisking as it melts, until it is browned but not burnt. Transfer it away from the heat.

Step 4 –Mash the peeled potatoes with the buttermilk, the salt, the pepper, and 1/2 of the browned butter.

Step 5 –Arrange the mashed potatoes in a serving bowl, add the remaining browned butter, and garnish with the chives.

Step 6 –Serve.
