Ingredients
- 1 (7-ounce) box yellow rice
- 1 stick butter
- 1 (10.5-ounce) can cream of chicken soup
- 1-2 cups chicken, cooked and shredded
- 1 (15.25-ounce) can whole kernel corn, drained
- 1 1/2 cups cheddar cheese
- scallions, optional, to taste, for garnish
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Cook the rice according to the package directions.
Step 3 –Add the cooked rice, the butter, the cream of chicken soup, the chicken, the corn, and 1 cup of the cheese into a mixing bowl and stir until well-combined.
Step 4 –Spoon the mixture into a 9×13-inch casserole dish.
Step 5 –Top the mixture with the remaining cheese.
Step 6 –Bake the casserole until it is bubbly, about 30 minutes.
