Ingredients

  • 2 cups packed dark brown sugar
  • 1 cup (2 sticks) salted butter, softened
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups old-fashioned oats

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In the bowl of a stand mixer, beat the butter and brown sugar together until fluffy.

Step 3 –Beat in the vanilla extract.

Step 4 –Add in the eggs one at a time, scraping the bowl after each one.

Step 5 –Mix together the salt, flour, and baking soda in a separate medium bowl.

Step 6 –Add the flour mixture into the creamed mixture in 2-3 batches, mixing until just combined each time.

Step 7 –Then, mix in the oats until just combined. Be careful not to overmix.

Step 8 –Using a cookie scoop or a spoon, place portions of the dough onto baking sheets, spacing them a couple of inches apart.

Step 9 –Bake until dark and chewy, about 12-13 minutes.

Step 10 –Let the cookies slightly cool before serving.
