Chewy Brown Sugar Cookies

Ingredients

  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 1/4 cups light or dark brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup granulated sugar

Directions

Step 1 -In a large bowl, stir together the flour, the baking soda, the cornstarch, the cinnamon, and the salt. Set it aside.

Step 2 -In a medium bowl, whisk the melted butter and the brown sugar together until no lumps remain.

Step 3 -Whisk the egg into the butter-brown sugar mixture.

Step 4 -Whisk the vanilla into the butter mixture.

Step 5 -Pour the wet ingredients into the dry ingredients and mix together with a large spoon or spatula. The dough will be very soft and thick.

Step 6 -Cover the dough and chill for at least 2 hours and up to 3 days. Chilling is mandatory.

Step 7 -Preheat the oven to 325 degrees F.

Step 8 -Line two large baking sheets with parchment paper or silicone baking mats. Set them aside.

Step 9 -Transfer the dough from the refrigerator and allow it to slightly soften at room temperature. Do this for 10 minutes if the dough was chilling for longer than 2 hours.

Step 10 -Pour the granulated sugar into a bowl.

Step 11 -Take 2 scant tablespoons of the dough, roll it into a ball, then roll it into the sugar.

Step 12 -Place the sugar-coated balls 3 inches apart on the prepared baking sheets.

Step 13 -Repeat the rolling and the sugaring process until the dough is all used.

Step 14 -Bake the cookies, about 8-9 minutes.

Step 15 -Carefully transfer the cookies from the oven and gently press down on the top of the cookies with the back of a fork. You are trying to create a crinkly top.

Step 16 -Place the crinkled cookies back in the oven until lightly golden-brown, puffy, and still very soft in the middle, about 2-4 minutes.

Step 17 -Transfer the cookies from the oven and allow them to cool on the baking sheet for 10 minutes.

Step 18 -Transfer the cookies to a wire rack to cool completely.

Step 19 -Repeat in batches until all the cookies are baked.

Step 20 -Serve.
