Ingredients

  • 2 tablespoons olive oil, divided
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • salt, to taste
  • pepper, to taste
  • 4 cups fresh kale, stems removed and chopped
  • 1 tablespoon lemon juice
  • 4 cups romaine lettuce, chopped
  • 1/4 cup parmesan cheese, grated
  • Caesar salad dressing, to taste, store-bought or homemade

Directions

Step 1 –Heat 1 tablespoon of the olive oil in a skillet over medium-high heat.

Step 2 –Add the chickpeas to the skillet and season with the salt and the pepper.

Step 3 –Roast the chickpeas until golden-brown, stirring frequently to avoid burning.

Step 4 –Remove the chickpeas from the heat and set them aside.

Step 5 –Place the kale, remaining olive oil, the lemon juice, and the salt into a large mixing bowl.

Step 6 –Massage the kale with your hands to soften it.

Step 7 –In a large salad bowl, combine the kale, the romaine lettuce, the parmesan cheese, and the Caesar dressing.

Step 8 –Top with the crispy chickpeas and serve.
