Ingredients

For the dressing:

  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup, optional
  • 2 teaspoons soy sauce or coconut aminos
  • 1 teaspoon ginger, grated
  • 1 small clove garlic, grated
  • sea salt, to taste

For the salad:

  • 2 medium carrots, grated
  • 1 red pepper, finely diced
  • 2 stalks celery, finely diced
  • 1/4 medium red onion, finely diced
  • 1/4 cup cilantro or parsley, chopped
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup roasted peanuts, almonds, or cashews, optional

Directions

Step 1 –Combine the sesame oil, lemon juice, honey, soy sauce, ginger, garlic, and salt.
