Ingredients

For the chicken:

  • 2 chicken breasts, boneless, skinless, and pounded to even thickness
  • salt, to taste
  • pepper, to taste

For the dressing:

  • 1/2 cup olive oil
  • 1/4 cup rice vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger

For the salad:

  • 6-8 cups mixed spring greens
  • 1 red pepper
  • 1/3 cup edamame, shelled
  • 1/2 cup mandarin oranges
  • 1 cucumber, sliced
  • 1 cup wonton strips
  • 1/3 cup cashews
  • sesame seeds, to taste

Directions

Step 1 –Season both sides of the chicken with the salt and the pepper.

Step 2 –In a greased skillet over medium heat, cook the chicken until the internal temperature reads 165 degrees F, about 5-6 minutes per side.

Step 3 –Transfer the chicken away from the heat and allow it to rest for 5 minutes prior to slicing.

Step 4 –While the chicken rests, in a bowl, whisk together the olive oil, the vinegar, the salt, the sugar, the garlic powder, the sesame oil, and the ground ginger

Step 5 –In a bowl, toss the lettuce, the red peppers, the edamame, the mandarin oranges, and the cucumbers.

Step 6 –Divide the salad between 4 plates.

Step 7 –Top the plates with an equal serving of the chicken.

Step 8 –Top the salads with the wonton strips and the cashews.

Step 9 –Drizzle the salads with the dressing and sprinkle with the sesame seeds.

Step 10 –Serve.
