Ingredients

  • 1 (15-ounce) can of black beans, rinsed, drained
  • 1 cup frozen corn, thawed
  • 1 avocado, diced
  • 1 jalapeño, seeds removed, finely chopped
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 medium red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons extra-virgin olive oil
  • 1/2 tablespoons honey
  • 1 clove of garlic, minced
  • 1/2 teaspoon ground cumin
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1/4 cup cotija cheese, crumbled

Directions

Step 1 –In a large bowl, combine the beans, corn, avocado, jalapeños, tomatoes, onion, and cilantro.

Step 2 –In a small bowl, whisk together the lime juice, extra-virgin olive oil, honey, garlic, and cumin. Season with salt and pepper.

Step 3 –Pour the dressing over the salad mixture and toss to combine.

Step 4 –Add the cotija cheese and toss again.

Step 5 –Season to taste with more salt and pepper.
