Ingredients

  • 2-3 pounds butternut squash, cubed
  • 1–2 tablespoons olive oil
  • fine sea salt, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Peel and cut the butternut squash into the desired cube size.

Step 3 –Drizzle the diced squash with a tablespoon or two of the olive oil, tossing until the squash is evenly coated.

Step 4 –Arrange the squash in an even layer (no overlapping) on a large baking sheet.

Step 5 –Season the squash with the salt, plus any extra preferred seasonings.
