Wild plums have a depth of flavor and sweet-tartness that you can’t find from commercially grown plums. Wild Plum Jam brings those bold fruity flavors to your next breakfast, brunch, or afternoon tea! With just a hint of citrus and boiled into delightful sweetness, Wild Plum Jam is summertime in a jar! Ingredients

  • 4 1/2 pounds wild plums
  • 4 1/2 tablespoons lemon juice
  • 4 1/2 pounds sugar

Directions

Step 1 –Pit the plums and place them into a large pot on the stove-top over medium heat.

Step 2 –Add in the lemon juice.

Step 3 –Cook the plums until they begin to release their natural juices, about 10 minutes.

Step 4 –As the juices release, add in the sugar and stir.

Step 5 –Bring the mixture to a simmer, stirring for 10 minutes.

Step 6 –When the jam has thickened, remove it from the heat.

Step 7 –Pour the jam into mason jars or other desired airtight jars.

Step 8 –Seal the jars

Step 9 –Boil a large pot of water.

Step 10 –Place the sealed jars in the boiling water to let the jam sterilize and prevent harmful bacteria from growing, at least 10 minutes, adding 5 minutes for every 3,000 feet of elevation you are above sea level.

Step 11 –Transfer the jars from the water and allow them to cool to room temperature.

Step 12 –Refrigerate until cool. .

Step 13 –Serve chilled.
