Ingredients

  • 1 orange
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cranberries, chopped
  • 1 egg, beaten
  • 1/4 cup butter, melted

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×5-inch loaf pan with cooking spray.

Step 3 –Grate the rind from the orange.

Step 4 –Squeeze the juice and add enough water to make 3/4 cup of liquid. Set aside.

Step 5 –In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange rind together until well combined.

Step 6 –Stir in the cranberries.

Step 7 –In a small mixing bowl, whisk together the beaten egg, melted butter, and orange juice-water mixture

Step 8 –Stir the wet mixture into the dry mixture until just combined, careful not to overmix.

Step 9 –Spread the mixture evenly into the prepared loaf pan.

Step 10 –Bake until a toothpick inserted into the center comes out clean, about 50-60 minutes.

Step 11 –Remove the loaf from the oven and allow it to cool in the pan for 10 minutes.
