Ingredients

  • 1 head cauliflower, trimmed, rinsed, and cut into 4 pieces
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 4 ounces cheese, of your choice, grated and separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Directions

Step 1 –Bring a large pot of water to a boil.

Step 2 –Add the cauliflower.

Step 3 –Cook until tender, about 5-6 minutes.

Step 4 –Drain the cauliflower in a colander.

Step 5 –Place the cauliflower in a 9×13 glass casserole dish and set aside.

Step 6 –Melt the butter in a medium saucepan, over low heat.

Step 7 –Add the flour and stir with a wooden spoon until a smooth paste forms.

Step 8 –Continue to stir the mixture gently for a minute, then take the pan off the heat.

Step 9 –Gradually add the milk while stirring constantly until the milk is fully incorporated.

Step 10 –Return the pan to the heat and let it cook on low for 5-10 minutes, stirring occasionally.

Step 11 –Stir 3 ounces of the grated cheese into the saucepan to melt.

Step 12 –Season the cheese mixture with the salt, pepper, and nutmeg.

Step 13 –Preheat the broiler to high.

Step 14 –When the cheese mixture has fully melted into a sauce, pour it evenly over the cauliflower.

Step 15 –Sprinkle the remaining 1 ounce of the grated cheese on top.

Step 16 –Place the casserole dish in the oven under the broiler for a few minutes until the top starts to bubble and brown.

Step 17 –Serve immediately.
