Ingredients

  • 6 ounces fresh cranberries
  • 1/4 cup maple syrup
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

For the French toast:

  • 2 eggs
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/2 tablespoon brown sugar
  • 4 slices bread of choice, thick

Directions

Step 1 –Combine the cranberries, maple syrup, brown sugar, and cinnamon in a small saucepan over medium heat on the stove-top. Mix well and cover.

Step 2 –Let the cranberry mixture cook for about 15 minutes.

Step 3 –Take off the lid and stir well.

Step 4 –Let it cook uncovered for another 2-3 minutes.

Step 5 –Take the mixture off the heat and set aside.

Step 6 –Preheat a large cooking pan over medium heat and lightly grease it.

Step 7 –In a wide and shallow bowl, whisk the eggs, milk, vanilla, cinnamon, and sugar until smooth.

Step 8 –Place the bread slices in the egg mixture, coating well on both sides.

Step 9 –Place the saturated bread in the greased cooking pan and cook for a few minutes on each side, until nicely golden brown and firm to the touch.

Step 10 –Serve the french toast warm with the cranberry topping.
