When a busy day is ahead, a hearty breakfast of Country Ham and Potatoes is required. Salty, fatty ham is fried to perfection in a scoop of buttery deliciousness. Ingredients

  • 3 tablespoons butter
  • 2 pounds ham, fully cooked and sliced into 1/2-inch pieces
  • 1 1/2 pounds of potatoes, peeled, quartered, and cooked
  • parsley, to taste

Directions

Step 1 –In a large skillet over medium-high heat, add the butter and ham.

Step 2 –Brown the ham on both sides until heated through, about 2-3 minutes per side.

Step 3 –Move the ham to one side of the skillet and add the potatoes.

Step 4 –Brown the potatoes in the ham drippings until tender, about 6 minutes.

Step 5 –Sprinkle the potatoes with the parsley.

Step 6 –Plate and serve.
