The gorgonzola cheese adds a little funky interest, and the apple cider vinaigrette ties the Apple Walnut Salad all together.

Ingredients

  • 5 cups romaine, torn
  • 5 cups red leaf lettuce, torn
  • 1 large red apple, chopped
  • 1 large green apple, chopped
  • 1 cup (4 ounces) Gorgonzola cheese, crumbled
  • 1/2 cup walnuts, chopped and toasted
  • 1/3 cup red onion, thinly sliced
  • 1/3 cup dried cranberries

For the cider vinaigrette:

  • 3/4 cup apple cider
  • 3 tablespoons cider vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup walnut oil

Directions

Step 1 –Combine the romaine, red leaf lettuce, red apple, green apple, Gorgonzola, walnuts, red onion, and dried cranberries in a salad bowl.

Step 2 –In a small bowl, whisk the cider, vinegar, honey, salt, and pepper.

Step 3 –Gradually whisk in the walnut oil.
