Everyone, including the cooks, love these Easy Baked Fingerling Potatoes! It’s a speedy side with a fluffy interior, crispy exterior, and savory seasoning. Add in a sharp bite of parmesan and you have a dish that might just overshadow everything else on the plate! All you need is 30 minutes to make these perfectly peppy potatoes!

Ingredients

  • 1 pound fingerling potatoes, cut in half lengthwise
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme leaves or 2 sprigs of fresh thyme
  • 1 teaspoon pepper
  • 1 tablespoon parmesan cheese, shredded

Directions

Step 1 –To begin, preheat the oven to 400 degrees F.

Step 2 –Combine the oil, the thyme, the potatoes, the garlic, the salt, and the pepper in a large bowl, mixing until evenly coated.

Step 3 –Spread the potatoes onto a baking sheet, flat-side down, baking for 15 minutes.
