Ingredients

  • 3 tablespoons lemon juice
  • 3 tablespoons butter, melted
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon lemon pepper seasoning
  • 4 (6-ounce) cod fillets
  • 2 tablespoons fresh parsley, minced
  • 2 teaspoons lemon zest

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Coat a 9×13-inch baking dish with cooking spray.

Step 3 –In a shallow bowl, mix the lemon juice and the butter.

Step 4 –In a separate shallow bowl, mix the flour, the salt, the paprika, and the lemon pepper seasoning.

Step 5 –Dip the fillets in the lemon juice mixture and then in the flour mixture to coat both sides. Shake off the excess.

Step 6 –Place the fillets in the prepared baking dish.

Step 7 –Drizzle the cod with the remaining lemon juice mixture.

Step 8 –Bake until the fish has just begun to flake easily with a fork and it is cooked through at 145 degrees F, about 12-15 minutes.

Step 9 –Turn on the broiler and broil until golden-brown, about 2-3 minutes. Keep a close eye on it so it doesn’t burn.

Step 10 –Mix the parsley and the lemon zest.

Step 11 –Sprinkle the parsley-lemon zest mixture over the fish.

Step 12 –Serve.
