Butter-Me-Up Cod

Cod fillets play nice with an expertly seasoned coating and then are seared to flaky perfection. With a drizzling of a rich garlic-lemon sauce, Butter-Me-Up Cod will kindly become a new (maybe even weekly) favorite. Delicious flattery will get you everywhere, especially right onto your plate!

Ingredients

  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper
  • 4 (6-ounce) cod fillets, skinless, about 1-inch-thick
  • 5 tablespoons butter, cut into 1-tablespoon pieces, divided
  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • 1 1/2 tablespoons low-sodium chicken broth
  • 1 1/2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon fresh parsley, chopped, for garnish
  • lemon wedges, to taste, for garnish

Directions

Step 1 –In a large shallow bowl, add the flour, the paprika, the onion powder, the thyme, the oregano, the cayenne pepper, the salt, and the black pepper and whisk to combine.

Step 2 –Individually add the cod fillets to the flour mixture, turning each to coat them well.

Step 3 –In a large, nonstick skillet over medium-high heat, add 1 tablespoon of the butter and the olive oil and heat until the butter has melted.

Step 4 –Add the coated cod fillets to the heated butter-oil mixture and sear them until they reach an internal temperature of 145 degrees F, are golden-brown on each side, and are easily flaked with a fork, about 3-4 minutes per side.

Step 5 –Place the cooked cod fillets on a large serving platter.

Step 6 –In the same skillet over medium-low heat, melt the remaining butter.

Step 7 –Add the garlic to the melted butter and sauté just until it is fragrant and lightly deepened in color but not browned, about 15 seconds.

Step 8 –Reduce the heat to low. Carefully add the chicken broth and the lemon juice to the garlic and simmer, stirring constantly, until it is heated through, about 15-30 seconds.

Step 9 –Immediately pour the garlic sauce over the cooked cod fillets.

Step 10 –Garnish the cod fillets with the parsley and the lemon wedges and serve.
