Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup yellow onion, chopped
  • 1 tablespoon Italian seasoning
  • 3/4 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 1/4 teaspoon fresh ground black pepper
  • 8 cups broth, chicken, beef, or vegetable
  • 3-4 cups vegetables, of your choice, fresh, frozen, or canned, chopped
  • 1 medium potato, peeled and chopped
  • 1 bay leaf
  • 1 (6-ounce) can tomato paste
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 cup alphabet pasta

Directions

Step 1 –In a 5-quart pot or Dutch oven over medium heat, heat the olive oil.

Step 2 –Add the garlic, the onion, the Italian seasoning, the salt, the thyme, and the pepper to the hot oil.

Step 3 –Stir and cook the onion mixture until softened, about 5 minutes.

Step 4 –Add the broth, the vegetables, the potato, the bay leaf, the tomato paste, and the diced tomatoes to the pot and bring the mixture to a boil.

Step 5 –Add the pasta to the soup mixture.

Step 6 –Cover the pot and allow the soup to simmer for 30 minutes.

Step 7 –Remove and discard the bay leaf.

Step 8 –Serve.
