There’s a lot of crunch to go around when this Asian Chicken Salad is on the table! Coleslaw, toasted almonds, sesame sticks… you can hear this salad for miles, and it sounds good! But of course, that’s not all there is to Asian Chicken Salad! Sunny oranges, savory chicken, and a sweet, soy-sauce-infused dressing really makes this a flavor feast all around! This can be made in a snap, which is good because you might just find yourself craving more of it after the first bite!

Ingredients
For the salad:
- 12 cups coleslaw mix
- 4 cups rotisserie chicken, finely chopped
- 1 1/2 cups almonds or cashews, toasted and sliced
- 1 1/2 cups dried cranberries
- 3/4 cup red onion, finely diced
- 1/4 cup black sesame seeds
- 1 1/2 cups cilantro, chopped
- 1 cup sesame sticks, optional
- 2 (8.25-ounce) cans mandarin oranges, drained
For the dressing:
- 1 cup extra-virgin olive oil
- 1/2 cup balsamic vinegar
- 4 tablespoons low-sodium soy sauce
- 4 cloves garlic, chopped
- 4 tablespoons honey or brown sugar
- 4 tablespoons ginger, minced
- 2 teaspoons toasted sesame oil
- 3 tablespoons water

Directions
Step 1 –In a large bowl, layer the coleslaw mix, the chicken, the almonds, the cranberries, the red onion, the sesame seeds, the fresh cilantro, and the sesame sticks.
Step 2 –Add the mandarin oranges.
Step 3 –Combine the olive oil, the balsamic vinegar, the soy sauce, the garlic, the honey, the ginger, and the sesame oil in a blender.
Step 4 –Add the water and blend until smooth.
Step 5 –Lightly pour the dressing over the salad mixture and gently toss to combine.
Step 6 –Serve.
