Bagel Breakfast Sliders

Bagel Breakfast Sliders are how you make big breakfasts for a crowd in a hurry while also making that same crowd very happy indeed! Each hand-seasoned bagel is filled with fluffy, creamy eggs, crispy bits of bacon, tangy cream cheese, and refreshingly sharp chives. It’s like a full English breakfast in bagel form! Bagel Breakfast Sliders should definitely slide onto your regular breakfast menu moving forward!

Ingredients

  • 8 eggs
  • 1/4 cup milk
  • 8 slices bacon
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons chives, finely chopped
  • 4 tablespoons cream cheese, softened
  • 10 mini bagels, halved
  • 1 1/2 cups cheddar cheese, shredded
  • 3 tablespoons butter, melted
  • 2 teaspoons dried onion
  • 2 teaspoons granulated garlic
  • 2 teaspoons sesame seeds
  • 2 teaspoons poppy seeds

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish with cooking spray.

Step 3 –In a large bowl, beat the eggs and the milk together until light and frothy.

Step 4 –In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes.

Step 5 –Transfer the bacon slices from the pan to drain on paper towels.

Step 6 –Drain all but 1 tablespoon of bacon fat from the pan.

Step 7 –Pour the egg mixture into the skillet with the remaining bacon grease and immediately reduce the heat to medium-low.

Step 8 –Cook the eggs, stirring occasionally and gently, until the eggs are nearly set, about 3-4 minutes.

Step 9 –Season the eggs with the salt and the pepper and stir in the chives.

Step 10 –Transfer the pan from the heat.

Step 11 –Spread the cream cheese onto the bottom halves of the bagels.

Step 12 –Place the bagel bottoms in the prepared baking dish, side-by-side, with the cream cheese sides facing up.

Step 13 –Spread the egg mixture over the cream cheese.

Step 14 –Crumble the cooked bacon on top of the eggs.

Step 15 –Sprinkle the bacon layer with the cheddar cheese.

Step 16 –Add the bagel tops, cut-side down, to create 10 side-by-side sandwiches.

Step 17 –Brush the bagel tops with the melted butter.

Step 18 –Sprinkle the bagel tops with the dried onion, the granulated garlic, the sesame seeds, and the poppy seeds.

Step 19 –Bake until the bagels are toasted and the cheese has melted, about 10 minutes.

Step 20 –Serve.
