Baked Southwest Chicken

Say goodbye to boring, plain chicken! This Baked Southwest Chicken is bursting with flavor and so easy to make. It’s perfectly seasoned and deliciously decorated with beans, corn, green chiles, bell pepper, and cheese! Baked Southwest Chicken is delicious and can be served with a side salad, rice, or even some tortillas for a hearty, unique meal.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn
  • 1 can green chiles, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1 cup Colby jack cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Step 1 –Set the oven to 375 degrees F.

Step 2 –In a small mixing bowl, combine together the garlic powder, cumin, pepper, and salt. Then, set it aside.

Step 3 –In another bowl, mix the black beans, green chiles, red bell pepper, and chopped cilantro together. Set it aside.

Step 4 –Lay the chicken breasts flat in a large oven-safe dish.

Step 5 –Sprinkle both sides with the seasonings.

Step 6 –Spread the corn mixture on the chicken, and top with the cheese.

Step 7 –Cover the chicken with foil and bake for 20 minutes.

Step 8 –Uncover, and continue to cook for another 25 to 35 minutes, until the chicken has reached an internal temperature of 165 degrees F.

Step 9 –Serve warm and enjoy.
