Banana Cake

This moist and banana-y dessert, topped with a rich and smooth cream cheese frosting, will bring a tree-swinging good time to your next party. Ingredients

For the cake:

  • 2 1/2 tablespoons lemon juice, divided
  • 1 1/2 cups milk
  • 1 1/3 cup banana, mashed
  • 2/3 cup butter, softened
  • 1/2 cup brown sugar
  • 1 cup white sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • bananas, sliced, optional, to taste, for topping

For the frosting:

  • 1 (8-ounce) package cream cheese
  • 1/3 cup butter, softened
  • 1 teaspoon lemon juice
  • 1 1/2 teaspoons lemon zest
  • 3-3 1/2 cups powdered sugar

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease and flour a 9×13-inch baking dish.

Step 3 –In a measuring cup, add 1 1/2 tablespoons of the lemon juice and top with the milk.

Step 4 –In a medium bowl, add the mashed bananas and 1 tablespoon of the lemon juice and mix well.

Step 5 –In a large bowl, use a mixer to beat 2/3 cup of the butter, the brown sugar, and the white sugar until well-combined.

Step 6 –With the mixer on high speed, add the eggs, one at a time, and the vanilla extract to the sugar mixture and mix until it is light and fluffy.

Step 7 –In a medium bowl, add the flour, the baking soda, and the salt and mix well.

Step 8 –Alternate adding the flour mixture and the milk mixture to the egg mixture and stir until combined. Be sure not to overmix.

Step 9 –Fold the banana mixture into the cake batter.

Step 10 –Pour the cake batter into the prepared baking dish and place it in the oven.

Step 11 –Reduce the oven heat to 300°F and bake, until a toothpick inserted in the center comes out clean, about 1 hour-1 hour 10 minutes. Be sure not to overbake.

Step 12 –Transfer the baked cake to the freezer to help make the cake extra moist, about 45 minutes.

Step 13 –Transfer the cooled baked cake to a wire rack to cool completely before frosting.

Step 14 –In a large bowl, use a mixer to combine the remaining butter and the cream cheese until fluffy.

Step 15 –Add the remaining lemon juice and the lemon zest to the cream cheese mixture and mix well.

Step 16 –Add the powdered sugar, a little at a time, to the frosting mixture and mix until it is light and fluffy.

Step 17 –Use a frosting spatula to evenly spread the frosting over the cake and then top with the sliced bananas.

Step 18 –Slice and serve.
