Ingredients
- 4 cups frozen potatoes, thawed
- 1 cup onion, chopped
- 1 cup green pepper, chopped
- 2 tablespoons butter
- 2 cups pork, cooked and shredded
- 2 teaspoons chicken bouillon granules
- 1/4 teaspoon pepper
- 2 teaspoons all-purpose flour
- 1/2 cup 2% milk
- 3/4 cup cheddar cheese, shredded
- green onions, to taste, chopped
Directions
Step 1 –In a large cast-iron skillet over medium heat, cook the potatoes, the onion, and the green pepper in the butter until the veggies are almost tender, about 5-7 minutes.
Step 2 –Stir the pork, the bouillon, and the pepper into the potato mixture until the meat is heated through, about 5-7 minutes.
Step 3 –In a small bowl, combine the flour and the milk until it is smooth.
Step 4 –Add the flour mixture to the skillet.
Step 5 –Reduce the heat to medium-low and cook the pork mixture, stirring frequently, until it has thickened, about 4-5 minutes.
Step 6 –Sprinkle the meat mixture with the cheese and then transfer the skillet from the heat.
Step 7 –Let the meat mixture stand until the cheese has melted, about 5 minutes.
Step 8 –Sprinkle with the green onions and serve.
