Betty’s Biscoff® Cookie Bars

A delicious, salted caramel sauce is layered between two cookie bars that have been infused with that indescribable Biscoff cookie butter. Need we say more?! Ingredients

  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 1 cup unsalted butter, room temperature
  • 1 cup Biscoff cookie butter
  • 1 1/3 cups light brown sugar, packed
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup salted caramel sauce, store-bought or homemade
  • flaky sea salt, to taste, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Generously coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large bowl, add the flour, the oats, the baking soda, the cinnamon, and the sea salt and whisk to combine.

Step 4 –In the bowl of a stand mixer, add the butter, the cookie butter, the light brown sugar, and the granulated sugar and beat, scraping down the sides of the bowl with a spatula, as needed, until it is smooth, about 2 minutes.

Step 5 –Add the eggs and the vanilla extract to the butter mixture and mix until it is combined.

Step 6 –Add the flour mixture to the butter mixture and mix until it is just combined.

Step 7 –Evenly press 1/2 of the dough into the prepared baking dish.

Step 8 –Bake the cookie crust, about 12 minutes.

Step 9 –Transfer the baking dish to a wire rack and drizzle the cookie crust with the caramel sauce.

Step 10 –Use a spatula to place the remaining dough on top of the caramel sauce and carefully spread it out as much as possible.

Step 11 –Use lightly dampened hands to gently press the dough into the top of the caramel layer.

Step 12 –Bake the cookie bars until they are golden-brown, about 24-30 minutes.

Step 13 –Transfer the baking dish to the wire rack and let the cookie bars cool completely.

Step 14 –Sprinkle the bars with the flaky sea salt, cut into squares, and serve.
