Bits Pasta

Ingredients

  • 16 ounces pasta, such as rotini or fusilli
  • 12 ounces bacon
  • 2 small onions, diced
  • 2 cups frozen peas
  • 1/2 cup grated parmesan
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon crushed red pepper, optional

Directions

Step 1 –Bring a pot of salted water to a boil.

Step 2 –Once boiling, add the pasta and continue to boil until the pasta is tender, about 7-10 minutes.

Step 3 –Reserve 1/2 cup of the pasta water before draining the pasta.

Step 4 –Add the bacon to a large skillet and cook over medium heat until it is brown and crispy.

Step 5 –Transfer the cooked bacon to a paper-towel-lined plate. When it is cool enough to handle, crumble the bacon.

Step 6 –Drain most of the bacon grease from the pan, leaving about 4 tablespoons.

Step 7 –Add the onion to the remaining bacon grease in the skillet, and sauté until tender, about 5 minutes.

Step 8 –Add the frozen peas and 1/2 cup of the reserved pasta water to the skillet.

Step 9 –Continue to cook and stir until the peas are heated through.

Step 10 –Add the pasta to the skillet, stir to combine, and then remove from the heat.

Step 11 –Top the pasta with the parmesan, the salt, the pepper, the crushed red pepper, and the crumbled bacon. Stir to combine.

Step 12 –Serve.
