Blackberry Crumble Bars

Oh yes, this is what summer is all about; taking fresh blackberries and transforming them into these Blackberry Crumble Bars! The crusts are crunchy and buttery, while the crumble on top is packed with cinnamon spice and almond flavor, both sandwiching a jammy, sweet, and tart blackberry mixture in between. You will basically feel like the season is dancing on your tongue with each bite! Your summer heart will melt for these Blackberry Crumble Bars!

Ingredients

For the filling:

  • 3 cups fresh blackberries
  • 6 tablespoons seedless blackberry jam
  • 1/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon kosher salt

For the crumble:

  • 3/4 cup quick-cooking oats, uncooked
  • 1 cup flour
  • 1/2 cup light brown sugar, packed
  • 1/2 cup almonds, sliced
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted

Directions

Step 1 –In a small saucepan, combine the blackberries, the blackberry jam, the white sugar, the cornstarch, and 1/8 teaspoon of the kosher salt.

Step 2 –Heat the blackberry mixture over medium-high heat and stir until the mixture comes to a boil.

Step 3 –Reduce the heat to medium and continue to occasionally stir the blackberry mixture until it thickens, about 7-10 minutes. Be careful that the mixture does not stick to the bottom of the pan.

Step 4 –Transfer the blackberry mixture from the heat and allow it to cool.

Step 5 –Preheat the oven to 350 degrees F.

Step 6 –Line an 8×8-inch baking pan with a large piece of parchment paper, enough to cover the bottom with extra room on two sides to make a sling.

Step 7 –Spray the parchment paper and any exposed parts of the pan with cooking spray.

Step 8 –Combine the oats, the flour, the brown sugar, the almonds, the cinnamon, the baking soda, and the remaining salt in a bowl and stir until well-mixed.

Step 9 –Drizzle the melted butter into the oat mixture and stir the crumble mixture until incorporated.

Step 10 –Spread 2 cups of the crumble mixture out onto the prepared pan and flatten.

Step 11 –Bake the crumble mixture in the oven until lightly golden, about 10 minutes.

Step 12 –Transfer the crust from the oven and allow it to cool for 5 minutes.

Step 13 –Pour the filling over the crust and sprinkle the remaining crumble mixture evenly over the top.

Step 14 –Return the pan to the oven and bake until the top is lightly browned and the filling is bubbly, about 40 minutes.

Step 15 –Cool completely in the pan, about 1-2 hours.

Step 16 –Use the parchment to lift the blackberry crumble out of the pan.

Step 17 –Cut into bars and serve.
