Breaded Chicken Fingers

Ingredients

  • 1 egg, beaten
  • 1 cup buttermilk
  • 1 1/2 teaspoons garlic powder
  • 6 chicken breast halves, skinless, boneless, and cut into strips
  • 1 cup all-purpose flour
  • 1 cup seasoned bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 quart oil, for frying

Directions

Step 1 –In a small bowl, whisk to combine the egg, buttermilk, and garlic powder.

Step 2 –Pour mixture into a large resealable zipper bag.

Step 3 –Add the chicken strips to the bag and seal it well, massaging it so the chicken is completely coated.

Step 4 –Refrigerate the chicken for at least 2 hours and up to 4 hours.

Step 5 –In another large resealable zipper bag, combine the flour, bread crumbs, salt, and baking powder.

Step 6 –Remove the chicken strips from the refrigerator and drain, discarding the marinade mixture.

Step 7 –Put the chicken strips in the bag with the flour mixture.

Step 8 –Seal the bag well and shake to fully coat the chicken strips with the flour mixture.

Step 9 –In a large cast-iron skillet, heat the oil to 375 degrees F.

Step 10 –Carefully place the flour-coated chicken into the hot oil in batches; working in batches so as to not cool the oil. Be careful to not let any oil splash on you.

Step 11 –Cook until the outside is golden brown, the juices run clear and no pink remains in the chicken, about 6-8 minutes.

Step 12 –Remove the chicken from the oil and place them on a stack of paper towels to drain.

Step 13 –Serve hot!
