Ingredients

  • 1/3 cup all-purpose flour
  • 1/3 cup cornbread/muffin mix
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (1-pound) pork tenderloin, cut crosswise into 1/2-inch slices
  • 1 large egg, beaten
  • 4 tablespoons canola oil
  • barbecue sauce, optional, to taste, for serving

Directions

Step 1 –In a shallow bowl, add the flour, the cornbread mix, the salt, and the pepper and mix to combine.

Step 2 –Dip the pork tenderloins in the egg, then in the flour mixture, patting to help the coating adhere.

Step 3 –In a large skillet over medium heat, heat 2 tablespoons of the oil.

Step 4 –Add 1/2 of the pork tenderloins to the oil and cook until they reach an internal temperature of 145 degrees F, about 3-4 minutes per side.

Step 5 –Transfer the pork tenderloins to drain on a paper-towel-lined plate.

Step 6 –Carefully wipe the skillet clean.

Step 7 –Repeat the cooking process with the remaining oil and the remaining pork tenderloins.

Step 8 –Serve the breaded tenderloins with the barbecue sauce.
