Brunswick Chicken Bake

The history behind the Brunswick stew is unclear, as Virginia, North Carolina, and Georgia all claim the stew was invented in their state. What is clear though is how amazing those simple country flavors taste together, as evidenced by this Brunswick Chicken Bake! The classic, rich tomato and creamy bean mixture is given extra smoky sweetness with the inclusion of barbeque sauce and Italian seasonings, and the juicy chicken makes sure each bite is meaty and delicious! Brunswick Chicken Bake makes the soup course the main course, exactly where it belongs!

Ingredients

  • 3 cups frozen cubed hash browns
  • 2 cups frozen lima beans
  • 1 (12-ounce) bag gumbo vegetable mix
  • 1 (14-ounce) can diced tomatoes
  • 1/2-1 cup barbeque sauce
  • 1 (0.7-ounce) packet Italian dressing mix
  • 1-2 pounds chicken breast, boneless and skinless, cut into bite-size pieces

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease 3-quart casserole dish or 9×13-inch baking dish.

Step 3 –Place all of the ingredients in a large bowl and stir until very well mixed.

Step 4 –Pour the mixture into the prepared casserole dish.

Step 5 –Cover the dish with foil and bake until the veggies are tender and the chicken is cooked through, about 45 minutes-1 hour.

Step 6 –Stir and serve.
