Ingredients
- 1 tablespoon butter
- 1 onion, chopped
- 1 cup corn
- 1 (30-ounce) can black beans, drained and rinsed
- 2 (14.5-ounce) cans diced tomatoes
- 1/2 teaspoon chili powder
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 2 cups vegetable broth
- 1/2 cup honey
- salt, to taste
- pepper, to taste
- 2 cups white rice, cooked and warm
Directions
Step 1 –In a large skillet over medium-high heat, melt the butter.
Step 2 –Add the onion, the corn, the black beans, and the tomatoes to the butter and sauté until tender, about 5 minutes.
Step 3 –Add the chili powder, the garlic, the oregano, the broth, and the honey to the veggie mixture and bring to a boil.
Step 4 –Boil the stew until it thickens, about 5-10 minutes.
Step 5 –Taste the stew for seasoning and add the salt and the pepper as desired.
Step 6 –Serve the stew over the warm rice.
