Butter Pecan Chicken

If your chicken needs a change of scenery, let’s give this change-of-taste a try! Butter Pecan Chicken will become a down-home, Southern favorite no matter your geographical location. The plump chicken breasts cross the road to get to the other side of this sweet and savory, buttery, pecan-filled glaze for a one-way ticket to great taste! Grab a banjo (or a plate) and jump on the flavor bandwagon of Butter Pecan Chicken. Y’all, the South knows where it’s at!

Ingredients

  • 4 chicken breasts, boneless and skinless
  • kosher salt, to taste
  • pepper, to taste
  • 1 tablespoon avocado oil
  • 1 tablespoon plus 1/3 cup butter
  • 1/3 cup pecans, chopped
  • 1/2 cup chicken broth
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried parsley

Directions

Step 1 –Heat a large skillet over medium-high heat.

Step 2 –Season both sides of the chicken breasts with the salt and the pepper.

Step 3 –Add the oil and 1 tablespoon of the butter to the heated skillet and heat until the butter has melted.

Step 4 –Place the seasoned chicken breasts in the butter mixture and cook until they reach an internal temperature of 150 degrees F, about 10 minutes on each side. Transfer them to a clean plate. They will not be cooked through yet.

Step 5 –Lower the heat to medium. Add the pecans, the remaining butter, the chicken broth, the brown sugar, the honey, the thyme, and the parsley and whisk to combine.

Step 6 –Place the chicken breasts in the sauce and simmer gently, occasionally spooning the sauce over the meat, until the sauce is bubbly and thickened and the chicken breasts reach an internal temperature of 165 degrees F, about 5-8 minutes.

Step 7 –Slice and serve the chicken drizzled with the sauce.
