Cheeseburger Soup is bubbling with the classic diner-style flavors, with juicy ground beef, melty cheese, and lettuce and tomato toppings. Ingredients

  • 1 pound ground beef
  • 3/4 cup onions, chopped
  • 3/4 cup carrots, shredded
  • 3/4 cup celery, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 4 tablespoons butter, divided
  • 3 cups chicken broth
  • 4 cups potatoes, diced and peeled
  • 1/4 cup all-purpose flour
  • 2 cups Velveeta cheese, shredded
  • 1 1/2 cups milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream
  • fresh lettuce, optional, for topping
  • tomatoes, optional, cubed, for topping

Directions

Step 1 –In a 3-quart saucepan over medium heat, brown the beef, about 6-8 minutes.

Step 2 –Drain the saucepan of excess fat and set it aside.

Step 3 –In the same saucepan, saute the onion, carrots, celery, basil, and parsley in 1 tablespoon of the butter until the vegetables are tender, about 10 minutes.

Step 4 –Add the broth, potatoes, and beef and bring to a boil.

Step 5 –Reduce the heat to low.

Step 6 –Cover and simmer until the potatoes are tender, about 10-12 minutes.

Step 7 –In a small skillet over medium heat, melt the remaining 3 tablespoons of the butter.

Step 8 –Add the flour, and cook, stirring, until bubbly, about 3-5 minutes.

Step 9 –Add the flour mixture to the broth mixture and bring it to a boil.

Step 10 –Cook, stirring, for about 2 minutes.

Step 11 –Reduce the heat to low.

Step 12 –Add the cheese, milk, salt, and pepper.

Step 13 –Cook and stir until the cheese melts.

Step 14 –Remove the soup from the heat.

Step 15 –Blend in the sour cream.

Step 16 –Top with fresh lettuce and tomatoes. Serve warm!
