Cheesy Croissant Casserole

When starting the morning with family and friends, it is nice to have a lovely, heartwarming dish to share. This Cheesy Croissant Casserole is a wonderful wake-up call and will certainly have everyone running to the table. Crusty croissants and crumbled bacon, with an exquisitely seasoned scrambled egg mixture, all combined together and topped with golden Gruyère and mozzarella cheeses… it’s what everyone will be excited about! Cheesy Croissant Casserole will be the most requested “let’s get this day started” meal from all of your people. It’s just so good, they may never leave!

Ingredients

  • butter, to taste, for greasing the pan
  • 6 large croissants, quartered
  • 6 slices bacon
  • 8 eggs
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons chives, finely chopped, plus more, to taste, for serving
  • 2 teaspoons thyme leaves, chopped
  • kosher salt, to taste
  • black pepper, to taste
  • cayenne, to taste
  • 1 cup Gruyère, shredded, divided
  • 1 cup mozzarella, shredded, divided

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Line an 18×26-inch baking sheet with parchment paper.

Step 3 –Using the butter, lightly grease a 9×13-inch baking dish.

Step 4 –Add the quartered croissants, cut-side up, to the prepared baking sheet and bake until golden-brown, about 6 minutes.

Step 5 –In a large skillet over medium heat, cook the bacon until crispy, about 8 minutes.

Step 6 –Place the bacon on a paper-towel-lined plate to drain, then chop the slices into bite-size pieces.

Step 7 –In a large bowl, add the eggs, the milk, the heavy cream, 2 tablespoons of the chives, and the thyme and whisk until well-combined.

Step 8 –Add the salt, the black pepper, and the cayenne to the egg mixture and whisk until well-combined.

Step 9 –Add 3/4 cup of the Gruyère cheese and 3/4 cup of the mozzarella cheese to the egg mixture and stir to combine.

Step 10 –Scatter the baked croissants and the chopped bacon on the bottom of the prepared baking dish.

Step 11 –Evenly pour the egg mixture over the top of the croissant mixture.

Step 12 –Use the back of a spoon and gently press down to ensure the croissants are fully soaked with the egg mixture.

Step 13 –Cover the baking dish and refrigerate, for at least 30 minutes and up to overnight.

Step 14 –Preheat the oven to 350 degrees F.

Step 15 –Add the remaining Gruyère cheese and the remaining mozzarella cheese to the top of the croissant mixture and bake until golden, about 45 minutes.

Step 16 –Sprinkle the extra chives over the baked croissant casserole and serve.
