Cheesy Roasted Tomatoes

Cheesy Roasted Tomatoes are vegetable appetizers that pack a pizza-like punch! Each juicy tomato slice is topped with a pile of sharp, nutty parmesan and melty, creamy mozzarella before being baked to a glorious golden-brown. A little sprinkle of basil on top adds the herbaceous, refreshing fragrance you’d expect from a fresh pizza pie from the oven. Serving up Cheesy Roasted Tomatoes will get everyone excited for the main course, whether that be pasta, chicken, steak, or yes even pizza… but they might just be excited for more of these!

Ingredients

  • 4 Roma tomatoes, sliced
  • 1 cup parmesan cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup fresh basil, chopped
  • olive oil, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place the tomato slices on a parchment-paper-lined baking sheet.

Step 3 –Top each tomato with a layer of the parmesan and then a layer of the mozzarella.

Step 4 –Sprinkle the basil over each tomato.

Step 5 –Lightly drizzle each tomato with the olive oil.

Step 6 –Bake until the cheese is melty and bubbly, about 8-10 minutes.

Step 7 –Turn on the broiler and broil until the cheese is browned, about 2-3 minutes.

Step 8 –Serve immediately!
