Chicken Spinach Alfredo

Chicken Spinach Alfredo pasta is the ultimate comfort food, but it doesn’t have to be reserved for trips to your local Italian joint. Making the creamy, dreamy sauce at home is easier than you think. The chicken adds protein to make it more filling and spinach brings in vital nutrients like Vitamin A. With all those elements combined, you have a balanced meal that will also give you the warm fuzzies inside. That’s the magic of Chicken Spinach Alfredo.

Ingredients

  • 1/2 pound penne pasta
  • 1 pound chicken breasts, boneless, skinless, and cut into small cubes
  • 6 ounces fresh baby spinach
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 1/2 cups parmesan cheese, freshly grated

Directions

Step 1 –Cook the pasta per packaging instructions until al dente.

Step 2 –Cook the chicken in a non-stick skillet over medium heat on the stove-top for about 3-5 minutes.

Step 3 –Add the spinach to the pan and cook for an additional 1-2 minutes.

Step 4 –In a large pot over medium heat, melt the butter and stir in the minced garlic. Cook until the garlic is soft and fragrant, about 1 minute.

Step 5 –Add the heavy cream to the garlic.

Step 6 –Whisk until it comes to a boil then reduce the heat.

Step 7 –Simmer until the mixture thickens.

Step 8 –Stir in the parmesan cheese, chicken and spinach, and drained pasta.

Step 9 –Serve!
