Chocolate Prune Squares

Chocolate Prune Squares might seem like a strange sweet to serve up, but you’ll find them extremely scrumptious! Seriously! You’ll be plum surprised with the combination of rich chocolate, crunchy nuts and toasted oats, plus floral, jammy prunes that all come together to form a dessert greater than the sum of its parts. Chocolate Prune Squares don’t let the fear of unusual stop them from having a great time! Neither should you!

Ingredients

  • 1/2 cup semisweet chocolate chips or chunks
  • 3 tablespoons honey
  • 3 tablespoons peanut butter, natural or creamy
  • 1/2 cup cocoa powder, unsweetened, plus more, to taste, for garnish
  • 1 cup walnuts, toasted, can substitute almonds or hazelnuts
  • 1/2 cup quick-cooking rolled oats, toasted
  • 16 ounces prunes

Directions

Step 1 –Coat an 8-inch square baking dish with nonstick cooking spray.

Step 2 –In a small saucepan over medium-low heat, add the chocolate chips, the honey, and the peanut butter and heat until melted and smooth.

Step 3 –Add 1/2 cup of the cocoa powder to the chocolate mixture and stir until well-combined.

Step 4 –In a container of a food processor, add the walnuts and process until finely ground.

Step 5 –Add the toasted oats to the ground walnuts and process until finely chopped.

Step 6 –Transfer the oat mixture to a large bowl.

Step 7 –In the container of the same food processor, add the prunes and process until finely chopped and well-combined.

Step 8 –Add the oat mixture to the prunes and process until well-combined.

Step 9 –Add the prune mixture to the same large bowl used previously.

Step 10 –Add the chocolate mixture to the prune mixture and stir with a wooden spoon until well-combined.

Step 11 –Transfer the prune mixture to the prepared baking dish and press it firmly and evenly into the bottom of the dish.

Step 12 –Transfer the prune mixture to the refrigerator and let it chill for at least 3 hours and up to overnight. If you intend to serve it sooner, cover it tightly and freeze it for 1 hour.

Step 13 –With a serrate knife, cut the prune mixture into serving-size squares.

Step 14 –Serve garnished with the extra cocoa powder.
