Christmas Brunch Casserole

If you’re hosting brunch on Christmas morning, the last thing you need to be doing is rushing around the day-of trying to make things perfect. Christmas Brunch Casserole is prepared the night before to make sure the brunch is as smooth and splendid as possible, while still serving up a hearty, happy meal as well! Cheesy eggs, crunchy hash browns, succulent bacon, and beefy mushrooms all come together to make Christmas Brunch Casserole like Santa’s giftbag of wonderful morning flavors! The holiday cheer is in the morning air when this casserole is on the table!

Ingredients

  • 1 pound bacon
  • 2 medium onions, chopped
  • 2 cups mushrooms, sliced
  • 1 tablespoon butter
  • 4 cups frozen hash brown potatoes, thawed
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic salt
  • 1 1/2 cups milk
  • 4 medium eggs
  • dried parsley, to taste
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –In a large skillet over medium-high heat, add the bacon and cook, turning occasionally, until it is evenly browned, about 10 minutes.

Step 2 –Transfer the bacon to a paper-towel-lined plate and drain the grease from the skillet.

Step 3 –Allow the bacon to cool, then crumble it.

Step 4 –Add the onions and the mushrooms to the bacon drippings in the skillet and cook until the onions are translucent and the mushrooms are tender, about 5 minutes.

Step 5 –Grease a 9×13-inch casserole dish with the butter.

Step 6 –Place the hash browns in the bottom of the prepared dish.

Step 7 –Sprinkle the hash browns with the salt, the pepper, and the garlic salt.

Step 8 –Top the hash browns with the crumbled bacon, the onions, and the mushrooms.

Step 9 –In a mixing bowl, add the milk, the eggs, and the parsley and whisk to combine.

Step 10 –Pour the egg mixture over the casserole.

Step 11 –Top the casserole with the cheese.

Step 12 –Cover the baking dish and refrigerate for at least 8 hours and up to overnight.

Step 13 –Preheat the oven to 400 degrees F.

Step 14 –Bake the casserole until set, about 45 minutes-1 hour.

Step 15 –Serve.
