Christmas Morning Breakfast Pies

Remember how excited you used to get on Christmas Eve? You could hardly sleep because you just couldn’t wait to see what Santa was going to leave under your tree. Well, now that you’re older, there’s a new reason for your sleepless anticipation and it’s all because of these Christmas Morning Breakfast Pies! You’ll run right past the gifts for a bite of the delightfully flaky pastries topped with crispy bacon, melty cheese, fresh spinach, tangy mushrooms, hearty ham, juicy tomatoes, and runny eggs. It’s the gift that keeps on giving! Everyone, no matter their age, will get excited about Christmas Morning Breakfast Pies! Unwrap some tasty holiday goodness with your fork!

Ingredients

  • 1 sheet puff pastry dough, thawed
  • 4 slices bacon, cooked
  • 1/2 cup spinach, roughly chopped
  • 1/4 cup Swiss cheese, shredded
  • 4 slices ham, cooked
  • 1/2 cup mushrooms, sliced and sautéed
  • 1/4 cup cheddar cheese, shredded
  • 4 eggs
  • 1/2 cup cherry tomatoes, halved
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Cut the puff pastry into 4 equal squares and place them on the prepared baking sheet.

Step 4 –Use a knife to score a 1/2-inch edge around each of the pastry squares, cutting about halfway through the dough.

Step 5 –Bake the dough squares until they are puffed and golden, about 10-12 minutes.

Step 6 –Transfer the baking sheet from the oven and use a spoon or spatula to press down on the inner portion to create a raised rim on the sides.

Step 7 –Place 1 slice of the bacon on top of each of the dough squares.

Step 8 –Evenly divide the spinach and the Swiss cheese and sprinkle them over the bacon slices.

Step 9 –Place 1 piece of the ham over each of the spinach-Swiss cheese layers.

Step 10 –Evenly divide the mushrooms and the cheddar cheese and sprinkle them on top of the ham pieces.

Step 11 –Gently crack 1 of the eggs over the top of each of the breakfast pies.

Step 12 –Evenly divide the tomatoes and tuck them into each of the breakfast pies.

Step 13 –Season the breakfast pies with the salt and the pepper.

Step 14 –Bake the pies until the eggs are cooked to your preferred doneness, about 15-20 minutes.

Step 15 –Serve.
