Cinco de Mayo Pan

It boasts all of your favorite taco flavors like perfectly seasoned, juicy chicken mixed with fresh and tender veggies… think of it as fajitas you can bake! How simple and tasty does that sound?! Ingredients

  • 1/4 cup plus 3 tablespoons lemon juice, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons canola oil
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 3/4 pound chicken breasts, boneless and skinless, cut into 1/2-inch strips
  • 1 small onion, sliced and separated into rings
  • 1/2 medium green pepper, julienned
  • 1/2 medium sweet red pepper, julienned
  • 1/2 medium yellow pepper, julienned
  • 4 (6-inch) flour tortillas, warmed
  • cheddar cheese, optional, to taste, shredded

Directions

Step 1 –Preheat the broiler.

Step 2 –Grease a 15x10x1-inch baking pan.

Step 3 –In a small bowl, combine 3 tablespoons of the lemon juice, the soy sauce, the Worcestershire sauce, the canola oil, the garlic, the cumin, and the oregano.

Step 4 –Place the chicken, the onion, the green pepper, the red pepper, and the yellow pepper on the prepared baking dish in a single layer.

Step 5 –Drizzle the chicken mixture with the remaining lemon juice and broil 4-6 inches from the heat source, about 4 minutes.

Step 6 –Turn the chicken mixture and drizzle with the sauce mixture.

Step 7 –Broil the chicken mixture until the meat reaches an internal temperature of 165 degrees F, about 4 minutes.

Step 8 –Serve the chicken mixture on the warm tortillas, sprinkled with the cheese.
