Cinnamon Apple Kugel

Ingredients

  • 16 ounces whole-grain wide noodles
  • 5 large eggs, whisked
  • 2 teaspoons cinnamon, plus more to taste
  • 1/2 cup sugar
  • kosher salt, to taste
  • 3 cups unsweetened applesauce
  • 2 tablespoons vegetable oil

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×13-inch baking dish with cooking spray.

Step 3 –Bring a large pot of water to a boil.

Step 4 –Cook the noodles for 5 minutes.

Step 5 –Drain and rinse the noodles with cold water to stop the cooking process.

Step 6 –In a bowl, whisk the eggs, the cinnamon, the sugar, the salt, and the applesauce together.

Step 7 –Coat the same pot used for the noodles with the oil.

Step 8 –Add the noodles and the applesauce mixture to the oil and stir to combine.

Step 9 –Transfer the noodles to the prepared baking dish.

Step 10 –Sprinkle the top of the kugel with the remaining cinnamon.

Step 11 –Bake until the kugel is completely set and the noodles on top are slightly crispy and browned, about 40-45 minutes.

Step 12 –Serve.
